Check the box that best corresponds to your order. If you are unsure, contact the farmer from which the livestock was purchased.

Whole, Half or Quarter

Quarters of a whole beef can be split up as individual quarters or 'split' quarters. 


Individual quarters consist of two front and two rear quarters (left and right sides of the animal). 


Split quarters are orders where cuts from front and hind quarters of a beef are evenly distributed across the customers. 


*Customers with Individual Quarters will only receive cuts from either the front or hind quarter NOT both.

Each sub-primal breaks down various ways depending on the cuts selected. 

  • E.g. the Short Loin can produce roasts, steaks, and ground beef (trim and fat).
  • Selecting "Roasts" means less meat for "Steaks" and vice versa. 
  • Not selecting "Roasts" means that portion of the sub-primal can be used to increase steak quantity or be used for ground beef.

 

Rules of Thumb 

  1. Select all the cuts you want! 
  2. Write additional instructions in the Customer Special Request (CSR) portion of the cut sheet.


Unselected cuts (unchecked boxes) are subject to Butcher's designation for repurposing.

  • E.g. "Roast" is left unchecked for the Short Loin sub-primal
  • No instructions are left in CSR box
  • Butcher will determine best choice to produce additional steaks or grind the "Roast" portion.
